Overview

MercyOne Central Iowa operates four not-for-profit, Catholic medical centers in Des Moines, West Des Moines, Newton and Centerville and two specialty hospitals – MercyOne Children’s Hospital in Des Moines and MercyOne Rehabilitation Hospital in Clive (965 beds total)  –  along with more than 20 additional facilities that house more than 50 primary care, pediatric, internal medicine and specialty clinics. Responsibilities

GENERAL SUMMARY:

Sets up trayline and assembles trays for patient service, prepares nourishments, infant and pediatric formulas, late trays, tube feedings as needed, gathers supplies and prepares food and supplies to floors as needed. Inventories and stocks gallies in-patient care areas. Responsible to maintain adequate inventory and items in a clean and safe manner. Production of cold food items for patient services.

 

ESSENTIAL FUNCTIONS:

  • Sets up trayline and assembles trays for patient service.
  • Takes food temperatures as required. Documents outcomes, processes appropriately. Notifies Supervisor of all temperatures out of compliance.
  • Microwaves food to be served hot and completes tray set up in galley.
  • Cleans workstation after each meal service.
  • Inventory and stock galley supplies utilizing par level lists. Maintains clean and organized galley.
  • Takes temperature of refrigerators, freezers and retherm units as required. Properly documents temperatures, documents and takes appropriate action when temperatures are out of acceptable range.
  • Responsible to inspect and ensure integrity of food items. Rotate, date, label, ensure none are outdated.
  • Delivers nourishments, formula, and tube feedings to patients and/or galley.
  • Pushes food carts, racks and dish bins.
  • Maintain clean trayline area by cleaning and deep cleaning galley equipment, refrigerators, cupboards, tables, etc., as required by accrediting and regulatory agencies.
  • Prepares and delivers late trays/food items.
  • Transfers patient trays from transport cart to retherm carts.
  • Determines food count, prepares and pre-portions food items for patient tray assembly.
  • Weighs and measures menu items for special diets.
  • Prepare trayline salads, using standardized recipes, as required for patient menu.
  • Prepares and slices vegetables and fruits for patient menu and related recipes.
  • Prepares jello, puddings, and custards.
  • Breakdown leftover items.
  • Prepares bulk nourishments and swallow evaluation kits.
  • Requisitions, gathers, and stocks supplies in work area.
  • Sets up late trays.
  • Gathers, prepares, labels, and delivers nourishments for patient use. Prepares bulk nourishments.
  • Prepares infant and pediatric formula per departmental policy and procedure.
  • Takes and records equipment temperatures as instructed in department and patient care areas. Notifies Supervisor of any out of compliance.
  • Reads tube-feeding recipes, calculates supplies needed, mixes products, labels appropriately and stores for supervisor to check.
  • Demonstrates knowledge of effective customer service skills and performance improvement.
  • Knowledgeable and practices food safety codes and governing standards; federal, state, local, and accreditation agencies.
  • Delivers food carts to the patient care areas, transfers trays and reassigns trays as necessary.
  • Assists in other areas as requested.

Qualifications

MINIMUM KNOWLEDGE, SKILLS AND ABILITIES REQUIRED:

  • High school diploma or GED preferred. Knowledge of several subjects in order to prepare reports, perform calculations and/or deal effectively with other people. Reading, writing, math skills.
